Ingredients:
3 largePotatoes
X Reserved potato cooking
Water
3 4 teaspoons fresh garlic
Mashed & chopped
1/2 cupLemon juice
2 cupFat-free mayo
Procedures:
1Peel and boil potatoes.
2Drain (save some of the cooking water), cool, mash with garlic.
3Mix in lemon juice, then mayo.
4Mix until well incorporated.
5Add potato-cooking water as need to thin slightly.
6Chill before using.
7Makes just under 3 cups
