Ingredients:
| | 1 ea Garlic bulb | | 5
| tbsp | Olive oil | | 14
| oz | Cannellini beans, cooked | | 1
| pinch | Rosemary, finely chopped | | 2
| tbsp | Parsley, chopped | | | Salt & pepper |

Procedures:
| 1 | Preheat oven to 375°F. | | 2 | Carefully break open the garlic bulb & divide into cloves, do not remove skins. | | 3 | Place on a small roasting tray & drizzle with 1 tb olive oil. | | 4 | Roast for 20 to 30 minutes until softened. | | 5 | Carefully squeeze the garlic cloves out of their skins & place in a food processor. | | 6 | add beans to the processor & process gradually adding the remainder of the olive oil. | | 7 | Add enough oil to get a thick paste similar to hummus. | | 8 | Beat in the rosemary & parsley & season. | | 9 | serve with pita bread. | | 10 | "bbc vegetarian" january, 1996 |
