Ingredients:
1 lbsFresh Shrimp, cooked
1 canWater Chestnuts
1 cupFresh Mushrooms, sliced
1 medOnion, sliced
1 cupCelery, sliced diagonally
1 1/2 lbsFresh Asparagus, steamed
11 ozCn Mandarin Orange sections
-drained
2 tbspVegetable Oil
1/2 tspSalt
1/4 tspFreshly Ground Pepper
2 tbspSugar
2 tbspSoy Sauce
Boiled Rice
Procedures:
1Shell; devein shrimp.
2Drain and slice water chestnuts.
3Arrange shrimp, chestnuts, mushrooms, onion, celery, asparagus, and oranges on lg.
4Tray.
5Heat oil in wok or electric skillet.
6Add onion, celery, salt, pepper, and sugar; cook, stirring, until veg.
7Are crisp-tender.
8Add asparagus and shrimp; place mushrooms and water chestnuts over shrimp.
9Sprinkle with soy sauce; place orange sections on top.
10Cover; cook until mixture begins to steam; reduce heat.
11Simmer about 12 min. serve on rice.
