Ingredients:
2 medAcorn squash
3/4 cupBrown rice -- raw
2 tbspTamari soy sauce
1 tspOlive oil
1 smallOnion -- chopped
2 medApples, peeled -- sliced
1/3 cupChopped almonds
1/2 cupSkim milk
1/4 cupDry red wine
2 tbspHoney
2 tspGinger -- freshly grated
1 tspCurry powder
1/2 tspNutmeg
Procedures:
1Preheat oven to 350=b0.
2Cut squashes in half, place cut side down on bakin= g sheet, and cover with foil.
3Bake 35 to 45 minutes, until tender.
4Meanwh= ile, cook rice with tamari.
5When squash is cool enough to handle, scoop ou= t pulp.
6Chop pulp and set aside.
7Saute onion and apples in oil until soft= ened.
8Stir in cooked rice and remaining ingredients.
9Stuff squash halves w= ith rice mixture, arrange in baking dish and bake for 20 minutes.
