Ingredients:
5 cupSliced Carrots
1/3 cupWater
1 tbspCornstarch
1/4 cupUnsweetened Orange Juice
1/4 tspSalt
1/8 tspPepper
1 tbsp+ 1 t. Margarine
2 tspChopped Fresh Parsley
Procedures:
1Combine carrots & water in a large saucepan; cover & cook over medium heat 20 min. or until crisp-tender.
2Drain, reserving liquid; add enough water to liquid to measure 3 t. set carrots aside.
3Combine carrot liquid, cornstarch, orange juice, salt, pepper & margarine in large saucepan.
4Bring to a boil over medium heat, stirring constantly; cook 1 min. or until thickened.
5Add carrots, cook 1 min, stirring well.
6Spoon onto serving plates.
7Sprinkle with parsley.
