Fresh yams in orange sauce

Ingredients:
4 lbsYams or sweet potatoes
2 tbspCornstarch
2 cupOrange juice
1/2 cupPitted dates
1 1/2 tspGrated orange peel
Procedures:
1Cook yams until tender drain and slice.
2Place slices in casserole dish blenderize orange juice, dates and cornstarch until smooth cook in small saucepan over medium heat until mixture thickens, stirring constantly.
3Remove from heat.
4Stir in orange peel pour sauce over yams in casserole dish.
5Cover with foil bake at 400°F for 45 minutes remove foil and continue baking basting frequently with sauce, about 15 more minutes garnish with orange slices and sprigs of mint.
6Note this can be made a day ahead of time and kept refrigerated until ready to bake.
