Ingredients:
2 smallYams
Boiling water
2 tbspLight brown sugar
2 tbspPlus 2 ts diet orange
Marmalade
2/3 cupOrange juice
1/8 tspDried sage
Dash salt
Procedures:
1Preheat oven to 350 °F.
2Boil or steam yams in boiling water 20 minutes, or until barely tender.
3(they should still be a little firm).
4Drain and cool.
5Peel and cut yams into ?inch chunks.
6Amount should measure 1-2/3 cups.
7In small shallow baking dish, coated with non-stick spray, place yam chunks.
8Sprinkle with brown sugar.
9Soften marmalade in small container over hot water or in microwave and mix with orange juice
10Add sage and salt.
11Pour over yams.
12Bake 30 minutes.
13note: note on your bread card the allowed portion for a serving of yams is ?cup.
14This is for cooked, mashed yams.
