| 1 | Note: if using ham, it must be fully cooked. |
| 2 | Wash potatoes, without scrubbing and leave whole. |
| 3 | Pierce each potato with a fork to allow steam to escape. |
| 4 | Place a ?cup water in a microwavable dish and add potatoes. |
| 5 | Cover and cook for 10 to 12 minutes, on high. |
| 6 | Stir after 5 minutes. |
| 7 | Let stand for 10 minutes to cool. |
| 8 | Cut thin slice from each potato. |
| 9 | Scoop out about 1 tablespoon potato from each potato. |
| 10 | Mash scooped out potato with fork; stir in yogurt and pepper. |
| 11 | Fill each potato shell with mixture. |
| 12 | Arrange on a microwavable plate and cook for 2 to 3 minutes. |
| 13 | Sprinkle with walnuts or ham. |
