Ingredients:
2 tspActive dry yeast
1/4 cupWarm water
6 cupWhole wheat flour
2 tspSalt
1 Egg
1 cupMashed potato
- up to 1 ?cups
1 cupHot potato water
2 tbspHoney
2 tbspVegetable oil
1/4 tspBaking soda
1 cupPlain yogurt or buttermilk
Procedures:
1Dissolve yeast in warm water.
2Combine flour and salt; make a well in the center of the mixture.
3Blend together egg, mashed potatoes, potato water, honey and oil.
4Combine baking soda and yogurt or buttermik; add to egg mixture.
5Pour mixture into well of flour and salt; blend thoroughly.
6Turn onto lightly floured surface and knead 10 minutes.
7Cover and let rise 1 ?to 2 hours, until a ?inch hole in dough made with a wet fingertip remains.
8If the hole fills in slightly, give the dough more time to rise.
9Deflate gently.
10Let rest 10 minutes.
11Shape into loaves and let rise until almost doubles, about 45 minutes.
12Bake at 350 °F for approximately 1 hour.
