Ingredients:

| tsp | Active dry yeast | | 1/4
| cup | Warm water | | 6
| cup | Whole wheat flour | | 2
| tsp | Salt | | 1
| | Egg | | 1
| cup | Mashed potato | | | - up to 1 ?cups | | 1
| cup | Hot potato water | | 2
| tbsp | Honey | | 2
| tbsp | Vegetable oil | | 1/4
| tsp | Baking soda | | 1
| cup | Plain yogurt or buttermilk |

Procedures:
| 1 | Dissolve yeast in warm water. | | 2 | Combine flour and salt; make a well in the center of the mixture. | | 3 | Blend together egg, mashed potatoes, potato water, honey and oil. | | 4 | Combine baking soda and yogurt or buttermik; add to egg mixture. | | 5 | Pour mixture into well of flour and salt; blend thoroughly. | | 6 | Turn onto lightly floured surface and knead 10 minutes. | | 7 | Cover and let rise 1 ?to 2 hours, until a ?inch hole in dough made with a wet fingertip remains. | | 8 | If the hole fills in slightly, give the dough more time to rise. | | 9 | Deflate gently. | | 10 | Let rest 10 minutes. | | 11 | Shape into loaves and let rise until almost doubles, about 45 minutes. | | 12 | Bake at 350 °F for approximately 1 hour. |
