Ingredients:
6 cupBeans
1 eachLots of water
3 eachOnions, diced
1/2 cupSoy sauce
2 eachVegetable bouillon cubes
5 eachCloves garlic, diced
2 cupCheddar cheese, grated
8 eachTortillas
Procedures:
1Use any kind of beans (pinto beans, or garbanzos, lentils, split pea or other legumes).
2Wash pinto beans in colander.
3Put in bowl.
4Cover with water to allow 3" of water above beans.
5Let sit overnight.
6Next morning wash again.
7Do not cook beans in soaking water.
8Place beans in pot.
9Cover with water to allow 3" above beans.
10Add onions, soy sauce, vegetable bouillon cubes and garlic.
11Bring to boil for 5 minutes, reduce heat and let simmer 6 hours.
12Check periodically to see that there is enough water covering beans, add more when necessary.
13Ladle into bowls, sprinkle with cheese, and serve with freshly steamed tortillas.
14Use leftovers for layered bean dip.
15Serves 8.
