Ingredients:
1 lbsVeal Cutlets, Sliced Thin
1/2 tspSalt
1/4 tspPepper
3/4 tspCurry Powder
3 tbspVegetable Oil
2 Onions, Diced
2 tbspEvaporated Milk
2 tbspTomato Paste
1 Lemon, Juiced
10 Parsley Sprigs, Chopped
2 tbspCognac Or Brandy
Procedures:
1Season veal with salt, pepper and ?t curry powder.
2Heat oil; brown veal slices on both sides.
3Remove meat and reserve.
4Add onions; saute until softened.
5Add evaporated milk and tomato paste.
6Cook until bubbly.
7Add lemon juice, rest of curry powder, and chopped parsley sprigs.
8Return veal slices to the sauce.
9Add the cognac or brandy; heat through.
10Serve on preheated platter
