Chicken avacado rice salad

Ingredients:
1 packWild and long grain rice
1 Avocado
1 tbspFresh lemon juice
4 Scallions
12 Pitted black olive
3 cupCooked chicken
1/4 cupRed wine vinegar
2 tbspDijon mustard
1/2 cupVegetable oil
1/2 tbspSugar
1 tbspFresh parsley
GARNISH
1/4 cupSlivered almonds
12 Cherry tomatoes
Procedures:
1Refrigerate cooked rice until cold.
2Peel the avacado and slice lengthwise into ?inch-thick strips.
3Coat with lemon juice, and refrigerate until well chilled.
4In a large mixing bowl, combine the scallions, olives, chicken and rice.
5Toss gently just until mixed.
6In small bowl, mix vinegar, mustard, veg.
7Oil, sugar, and parsley.
8Whisk together vigorously until completely combined.
9Just before serving, add the avocado slices to the chicken and rice mixture.
10Pour on dressing and toss gently to combine thoroughly.
11Serve sprinkled with toasted nuts and cherry tomatoes.judy garnett/pjxg05a
