Ingredients:

| lbs | Mushrooms, sliced | | | 2 ea Garlic cloves, chopped | | | 1 ea Onion, sliced | | 6
| tbsp | Olive oil | | 1
| tbsp | Butter | | 1/2
| cup | Sherry | | 1/4
| tsp | Basil, crushed | | 1/2
| tsp | Tarragon, crushed | | 1
| dash | Salt | | 1
| dash | Pepper |

Procedures:
| 1 | Cut chicken into serving pieces. | | 2 | Wash and pat dry. | | 3 | Season with salt and pepper. | | 4 | In skillet heat butter, garlic, and 2/3 of oil.brown chicken on both sides (about 10 minutes) lower heat and continue cooking for 25 minutes. | | 5 | In separate skillet heat 2-tbl oil. | | 6 | Saute" onions until clear. | | 7 | About 5 minutes. | | 8 | Add mushrooms and 2-tbl water; simmer 10 minutes; add to chicken. | | 9 | Cover and simmer chicken 15 minutes. | | 10 | Pour in sherry, up heat and boil for 1 minute. | | 11 | Serve hot. |
