Cherokee corn cob jelly

Ingredients:
12 Ears fresh corn
4 cupWater
4 cupSugar
1 3 fluid ounce package of
-liquid fruit pectin
Procedures:
1Cut corn from cobs and reserve for another use.
2Place cobs in water and bring to a boil.
3Cover and cook for 12-15 minutes.
4Remove cobs and strain liquid through cheesecloth.
5If neccessary, add water to make 3 cups.
6Place liquid in a saucepan and stir in sugar.
7Bring to a boil and cook until sugar is dissolved.
8Stir in pectin and cook 1 minute longer.
9Remove from heat, skim and spoon into sterilized jars.
10Seal and store.
11Makes 3 cups.
