Ingredients:
4 Baking potatoes (1-?lb)
-scrubbed
1/3 cupReduced-fat sour cream
1/4 cupButtermilk
2 tbspFresh cilantro, chopped
2 tbspTomato salsa
Salt & freshly ground pepper
1/2 cupMonterey Jack cheese OR
1/2 cupSharp Cheddar cheese, grated
Procedures:
1Pierce potatoes with a fork and wrap individually in a double thickness of paper towels.
2Microwave on high for 5 minutes.
3Rotate the potatoes and microwave on high until tender, about 5 minutes more.
4Unwrap the potatoes and let cool slightly.
5Cut off a ?inch thick slice along the top of each potato.
6With a melon baller or teaspoon, carefully hollow out the potatoes, leaving the shells.
7Put the insides in a medium-sized bowl, and mash with a fork or potato masher.
8Add sour cream, buttermilk, cilantro and salsa; mix well.
9Season with salt and pepper.
10Fill the shells with the potato mixture.
11Arrange the potatoes in a microwave-safe pie plate or baking dish.
12Cover with vented plastic wrap.
13Microwave on high for 5 minutes, or until heated through.
14Sprinkle the potatoes with cheese and serve.
