Carrot rice pilaf

Ingredients:
1 tspOlive oil
1 cupSliced, peeled baby carrots
1/2 cupLong grain white rice
1 cupDefatted, low-salt chicken
-stock
1/4 cupSnipped fresh chives
Salt and black pepper
Procedures:
1Heat oil in a medium-size nonstick skillet and saute carrots without browning for 5 minutes.
2Add rice and saute 1 minute.
3Add chicken stock, bring to a boil, cover and simmer gently 15 minutes.
4Remove lid and test rice; liquid should be absorbed and rice cooked through.
5Add chives, salt, and pepper to taste and toss well.
