Ingredients:
3 1/2 cupFresh black-eyed peas or
Frozen, thawed
3 cupChicken stock or canned
-low-salt broth
4 ozHam, finely chopped
1 smallYellow onion, chopped
2 tbspBalsamic vinegar or
-red wine vinegar
3 largeGarlic cloves, minced
1 Bay leaf
1/2 tspDried thyme, crumbled
1/4 tspDried crushed red pepper
Procedures:
1Bring all ingredients to boil in heavy large saucepan.
2Reduce heat and simmer until peas are tender, stirring occasionally, about 45 minutes.
3Season to taste with salt and pepper.
