Ingredients:
1 lbsBlack-eyed peas, rin
-sed/sorted
1/2 lbsBacon, cooked/crumbled
1 largeOnion, chopped
1 clGarlic, minced
1 tbspButter or margarine
1/2 tspDried thyme
Salt, to taste
Additional crumbled bacon
-optional
Procedures:

3Boil for 2 minutes.
4Remove from the heat; cover and let stand for 1 hour.
5Do not drain.
6In a skillet, saute onion and garlic in butter until tender.
7Add to pea mixture with thyme and salt.
8Return to the heat; simmer, covered for 30 minutes or until peas are soft.
9Top with crumbled bacon, if desired.
