Ingredients:
1 lbsBlack beans
1/2 galWater
1 Onion
3 Green peppers
1 Garlic clove
1/2 cupOlive oil
1/4 Ham boil, fresh, not smoked
3 Bay leaves
1 tbspSalt
1 ozBacon
1/2 cupVinegar
Procedures:
1Wash beans thoroughly and soak overnight in water.
2Use this water for cooking.
3Saute onion, green pepper and garlic in olive oil.
4Combine all ingredients except the vinegar which is added a few minutes before beans are ready to serve.
5Cook over low heat until beans are tender and the liquid is of thick consistency.
6Liquid can be thickened by taking out a few beans (?to ?c) and process in blender or food processor; then return to pot and stir to thoroughly mix
