Ingredients:

| lbs | Black beans, rinsed | | 3
| large | Bell pepper, green | | 1
| cup | Olive oil | | 2
| | Garlic cloves, minced | | 1/2
| tsp | Pepper | | 1
| tsp | Sugar | | 2
| large | Onion, coarsely chopped | | | -coarsely chopped | | 6
| oz | Tomato paste | | 1
| tbsp | Salt | | 1
| tsp | Oregano | | 2
| tbsp | Vinegar, white |

Procedures:
| 1 | Soak beans in water to cover--overnight. | | 2 | In same water bring to boil, lower heat, and cook beans slowly till tender, adding more water if needed. | | 3 | Drain and reserve liquid. | | 4 | Set aside. | | 5 | Saute onions and green peppers in olive oil until tender. | | 6 | Cool slightly and puree in a blender. | | 7 | Combine with tomato paste, garlic, salt, pepper and oregano. | | 8 | Cook while stirring for 5 minutes. | | 9 | Add beans and cook for 10 minutes more, adding reserved liquid to thin to slightly syrupy consistency. | | 10 | Blend in sugar and vinegar and adjust seasonings. | | 11 | Cool and refrigerate. | | 12 | Reheat gently, adjusting seasonings, and serve with pork or beef roast. | | 13 | Submitted by waring@ima.infomail.com |
