Black beans jose manuel

Ingredients:
1 lbsBlack beans, rinsed
3 largeBell pepper, green
1 cupOlive oil
2 Garlic cloves, minced
1/2 tspPepper
1 tspSugar
2 largeOnion, coarsely chopped
-coarsely chopped
6 ozTomato paste
1 tbspSalt
1 tspOregano
2 tbspVinegar, white
Procedures:
1Soak beans in water to cover--overnight.
2In same water bring to boil, lower heat, and cook beans slowly till tender, adding more water if needed.
3Drain and reserve liquid.
4Set aside.
5Saute onions and green peppers in olive oil until tender.
6Cool slightly and puree in a blender.
7Combine with tomato paste, garlic, salt, pepper and oregano.
8Cook while stirring for 5 minutes.
9Add beans and cook for 10 minutes more, adding reserved liquid to thin to slightly syrupy consistency.
10Blend in sugar and vinegar and adjust seasonings.
11Cool and refrigerate.
12Reheat gently, adjusting seasonings, and serve with pork or beef roast.
