Beets in mustard sauce

Ingredients:
1 1/2 lbsBeets, trimmed
3 tbspButter, unsalted
1/4 cupShallots, minced
1 tbspFlour
1/2 cupChicken stock
3 tbspDijon mustard
1/4 cupCream
Parsley, chopped
Salt and pepper
Procedures:
1Scrub the beets lightly and boil them for 35 minutes until barely tender.
2Drain under cold water, peel, then slice into ?inch pieces.
3Melt the butter and cook the shallots for 4 minutes over medium heat.
4Turn the heat down and stir in the flour.
5Cook for 2 minutes stirring often.
6Add the stock, mustard and cream.
7Cook for a few minutes until thick.
8Combine with the beets.
9Cook for a few minutes until it is warm.
10Add salt and pepper to taste.
11Serve with parsley sprinkled on top.
