Ingredients:
1 cupUncooked long grain rice
4 tbspOil
2 tbspDiced bell pepper
3 tbspDiced onion
1 tspDried parsley flakes
3 ozTomato paste
2 Cloves garlic, minced
2 1/2 cupCold water
3/4 tspSalt
Procedures:
1Lightly brown rice in oil over medium heat, stirring constantly.
2Add bell pepper amd onion and saute" five minutes more, stirring often.
3Remove from heat; add parsley, tomato paste and garlic.
4Stir well and then add water and salt.
5Heat mixture to boiling, cover tightly and simmer 20 to 30 minutes or until liquid is absorbed.
6Remove from heat and let steam 10 minutes before serving.
