Bean quesadilla

Ingredients:
1 cupBeans With Tomatoes (recipe)
8 Flour tortillas
2 cupLow-fat cheddary, grated
Cumin, to taste
Cayenne, to taste
Sour cream or plain yogurt
Guacamole (optional)
Procedures:
1Drain beans and tomatoes carefully of excess liquid (save for soup).
2fro each quesadilla, spread ?mixture on a flour tortilla, sprinkle on ?cup grated cheese and pinch of cumin and/or cayenne (if desired).
3Top with another tortilla.
4Hea in microwave 2 or 3 minutes, or until cheese is melted.
5=or= cook on a griddle or nonstick pan; place quesadilla on hot surface for 2 to 3 minutes, turn carefully, and cook an additional 1 or 2 minutes until the cheese is melted.
6cut into wedges and serve with sour cream or plain yogurt and guacamole if desired.
