Basics: boiled and mashed potatoes

Ingredients:
BOILED POTATOES
1 tbspSalt
1 Bay leaf [optl]
Water, to cover
MASHED POTATOES
2 lbsHot boiled peeled potatoes

1 cupButtermilk or milk
4 tspButter
1 tspSalt
1/2 tspPepper
Procedures:

2boiling potatoes:
3scrub or peel potatoes; place in large pot.
4Cover with cold water, add salt [about 1 tb for 16 cups of water.] and bay leaf.
5Bring to boil.
6Cover and boil for about 20 minutes or until fork-tender.
7Drain, remove bay leaf and return potatoes to pot over low heat for 30 seconds to evaporate excess moisture.
8mashed potatoes:
9in pot, mash together potatoes, buttermilk, butter, salt and pepper until smooth.
