Ingredients:
2 bn Kale, washed
1 Clove garlic, minced
1/2 medOnion, coarsely chopped
2 tbspOil
1 1/2 cupChicken stock or bouillon
4 medPotatoes, quartered
1 Stalk celery, chopped
Sour cream (garnish)
Procedures:
1Cut the kale leaves into ?inch-wide strips.
2Blanch them in lightly salted boiling water for one minute.
3Set aside.
4saute the garlic and onion in the oil until lightly browned.
5Add the chicken stock, potatoes, celery, and blanched kale.
6Simmer together until potatoes fall apart and lose their shape.
7Stir; season with salt and pepper, garnish with sour cream and serve.
