Ingredients:
1 1/2 tbspOil, olive
3 tbspLemon juice
1 1/2 tbspBalsamic vinegar
1/2 cupRice vinegar
1 1/2 tspMaple syrup
3/4 tspSalt
1/4 tspPepper, black, ground
1/4 tspPepper, cayenne, -=or=- more
-if desired
6 cupRed cabbage, thinly sliced
2/5 cupParsley, chopped
3 tbspCilantro, chopped
2/5 cupOnions, red, minced
Procedures:
1In a large bowl, combine oil, lemon juice, vinegars, maple syrup, salt, black pepper, and cayenne.
2Toss with cabbage; let stand at room temperature for 1 hour.
3Taste for seasoning and adjust if necessary, toss in parsley, cilantro and red onion.
4Serve at room temperature.
5Makes 8 servings.
