Artichokes vinaigrette

Ingredients:
4 Extra-large artichokes
2 cupConcentrated lemon juice
1 tbspSalt
1 dashBlack pepper
1 dashDried oregano
1 dashCrushed red pepper flakes
VINAIGRETTE
1 cupOlive oil
1/2 cupWhite wine vinegar
3 Garlic cloves
- peeled and crushed
1 dashDried oregano
1 dashCrushed red pepper flakes
1 tbspCapers
2 tbspChopped pimiento
Salt, pepper
Procedures:
1Trim artichokes stems to ?inch.
2Place upright in large kettle and add enough water to cover.
3Add lemon juice, 1 tablespoon salt, pepper, oregano and red pepper flakes.
4Bring to boil, reduce heat and simmer about 1 hour or until leaves pull easily from base of artichokes.
5Remove from pan and invert artichokes to drain thoroughly and cool.
6Using spoon, remove chokes and discard.
7To make vinaigrette, combine oil, vinegar, garlic, oregano, red pepper flakes, capers and pimiento in medium bowl.
8Season to taste with salt and pepper.
9Blend well.
10Stand artichokes upright in serving dish.
