Ingredients:
1 1/2 cupRaw rice, long-grain*
1 cupWhole tomatoes (16 oz)**
1 cupMexican style beans (16 oz)
3 Garlic cloves, minced
1 Onion, large, finely chopped
2 tbspVegetable oil
1 cupCottage cheese
1 cupGreen chili peppers, ***
2 cupMontery Jack cheese****
Procedures:
1*converted rice; **mashed; ***(4-oz), drained; ****grated, or process cheese mix thoroughly all ingredients except 1 cup of the grated cheese.
2Pour mixture into well-greased crock-pot.
3Cover and cook on low setting for 6 to 9 hours.
