Arroz con pollo (chicken & rice)

Ingredients:
1 lbsSkinless, boneless chicken
-breasts, cut into 1" strips
1 medOnion, quartered
2 Green peppers, chopped
1 Jalapeno pepper, seeded and
-chopped
3 Cloves garlic, minced
2 tbspChopped fresh coriander
2 cupChicken stock
1 cupCrushed and drained canned
-Italian plum tomatoes
1 tspGround cumin
1 tspChili powder
3/4 cupLong-grain brown rice
1 dashCayenne pepper
1 cupGreen peas (fresh or frozen)
1 tbspSliced pimentos
1 tbspRinsed and drained capers
Procedures:

2saute chicken strips in nonstick skillet until white, about 5 minutes.
3Set aside and keep warm.
4In large skillet, bring all other ingredients, except peas, pimentos and capers, to a boil.
5Cover and simmer about 30 minutes, until rice has adsorbed liquid.
6Add peas, remove from heat and let steam.
7Arrange chicken and sauce over rice, garnish with pimentos and capers.
8Makes 6 servings.
