Ingredients:
| 2
| lbs | Zucchini, washed and trimmed | | 1
| cup | Ground lamb shoulder* | | 1/2
| cup | Raw rice | | 1
| | Small onion, chopped fine | | 1
| tbsp | Chopped parsley | | 1/2
| cup | Stewed tomatoes | | | Salt | | | Black pepper |

Procedures:
| 1 | *note: may use lamb patties. | | 2 | Peel the zucchini and cut into 3 inch lengths. | | 3 | Scoop out the centers. | | 4 | Soak the vegetable in cold salted water about one half hour. | | 5 | Mix the lamb with the rice, onion, parsley, tomatoes, salt and pepper. | | 6 | Drain the zucchini and fill the hollows with the lamb mixture. | | 7 | Arrange in a saucepan and add water to the depth of one inch. | | 8 | The water should not reach more than halfway up the sides of the zucchini. | | 9 | Cover the pan tightly and simmer over low heat until the rice is>>>tender, about one hour. | | 10 | Check from time to time to see that the water has not evaporated. |
