Ingredients:
4 Zucchini, cubed
1 tbspSnipped chives
2 Large tomatoes, sliced
1/2 cupShredded low fat cheddar
1 Pepper to taste
1 tspLow fat margarine
1 tspDried leaf basil
Procedures:
1Preheat oven to 350°F.
2Steam zucchini until crisp tender.
3Using a slotted spoon, transfer zucchini to a shallow 2 quart casserole.
4Stir pepper and chives into margarine and pour over zucchini.
5Cover with tomato slices; sprinkle with basil and cheese.
6Bake, uncovered, 30 min. cal 54; fat: 2 g.
