Ingredients:
2 Eggs
1/2 cupSour cream
3/4 cupMustard-any kind
-plain or fancy
1 largePie shell (if ready-
-made, thawed)
1 Iarge onion, diced
6 medTo 8 md zucchini, sliced
-thinly
2 tbspButter
Dill to taste
Salt and pepper to
-taste
2 cupShredded cheddar
Jack or a combination
Diced tomatoes
Chopped olives
Sliced mushrooms
Procedures:
1Beat eggs with sour cream; set aside.
2Spread mustard gensrously pver pie shell; set aside.
3Saute onion and zuchhini in butter with dill, salt and pepper until onions are tender and translucent.
4Place sliced zucchini and onions into mixing bowl, add egg mixture, half of cheese, tomatoes, olives and mushrooms.
5Mix well, but gently, then pour filling into prepared pie shell, cover with other half of cheese, and bake in 350 degree oven for 30 to 45 minutes, or until set and golden.
6Makes 6 servinas.
