Zucchini mock crab cakes

Ingredients:
4 sliceBread, whole wheat, crumbled
1 tspBaking powder
1 tspSeafood seasoning, such as
-Old Bay
1 tbspMayonnaise, eggless, + 1 tsp
1/4 cupTofu, soft
2 cupZucchini, unpeeled, finely
-shredded
Procedures:
1Blend the tofu with a hand mixer until creamy.
2In a large bowl, combine all ingredients except zucchini.
3Mix well.
4place zucchini in a large strainer.
5Press out as much liquid as possible.
6Add zucchini to bread mixture.
7Mix with a fork for several minutes, until mixture is well combined and holds together.
8preheat a nonstick griddle or skillet over medium heat.
9Oil it lightly or spray with a nonstick cooking spray.
10divide zucchini mixture evenly into 8 portions and shape each portion into a patty.
11Place on prepared griddle and cook, turning several times, until patties are lightly browned on both sides.
12serve hot.
13Leftovers are good hot or cold.
