Ingredients:
2 1/4 lbsCooked peeled yams
1/3 cupSugar
1/3 cupBrown or maple sugar
Egg substitute equivalent to
-- 1 egg
1 1/2 tspGrated orange rind
1/3 cupRaisins
1 1/2 tspFreshly grated nutmeg
3/4 tspSalt
6 tbspMelted butter or margarine
DIXIE SAUCE
1 cupMaple syrup
1 tspGrated lemon rind
2 tbspLemon juice
Procedures:
1Whip together yams, sugar, nutmeg, salt, butter, egg substitute and grated orange rind until smooth.
2Coat an 8" ring mold with melted butter.
3Put in freezer to harden butter.
4Then dredge mold with flour.
5Press the mixture into the mold.
6Bake at 375°F. for 30 minutes.
7Turn out on a plate and serve with dixie sauce.
8To make the sauce, mix together sauce ingredients and heat.
9Serve warm, drizzled over yam turnout
