Ingredients:
1 largeOnion, choped fine
1 Green Chilli (optional)
1 medCourgette/Zucchini, sliced
1 tspMixed Herbs
1/2 tspBasil
Also called Lima beans?)
1/4 cupSoya Milk
1 dashLemon juice
1/2 tspPepper
1 tbspTomato Puree
2 Cloves Garlic, crushed
1 largeHead Broccoli
1 lbsChopped Skinned Tomatoes
1/2 tspMarjoram
1 canButter Beans (the big ones
1/4 cupRich vegetable stock
250 mlSoya Yoghurt
1/2 tspSalt
1/4 cupCorn
Procedures:
1Fry the onion, garlic and chilli in a little water or olive oil.
2Add the base and stalks of the broccoli (i.e.
3Everything except the flowerets), and the courgettes.
4When all this has softened sufficiently add the tomatoes and the herbs.
5Leave to simmer (covered) for fifteen minutes.
6While that is underway combine the beans, stock, soya milk, yoghurt, lemon juice, salt and pepper in a liquidiser until a smooth mixture is obtained.
7After the fifteen minutes are up add the bean mixture and simmer uncovered for a further five minutes.
8Add the corn and then enough tomato puree to take away the anaemic look.
9Serve on its own or with a macaroni style pasta.
