Ingredients:
2 tbspButter
1 lbsOnions, thinly sliced
2 eachCloves
2 tbspFlour (heaping)
1 pinchPowdered mace or nutmeg
1 eachBay leaf
1 literChicken or pork stock
300 mlMilk
1 eachSalt and pepper
150 mlCream
2 tbspGrated cheese (optional)
Procedures:
1Heat the butter, and when foaming add the onions and cloves.
2Let the onions soften, but not color at all.
3Sprinkle over the flour, mix well and cook, stirring, for about 1 minute; then add the nutmeg, the bay leaf and the stock.
4Stir all the time until it boils, and see that it is smooth.
5Simmer until the onions are cooked, then gradually add the milk, stirring, and when that boils lift out the cloves and bay leaf.

7It can now be liquidized, or served as is with the cream added, and a sprinkling of grated cheese.
