Warm asparagus with tarragon vinaigrette

Ingredients:
1 lbsAsparagus
1/2 cupOlive oil
2 tbspDijon-style mustard
1/4 cupWhite wine vinegar
1/4 tspSalt
1/4 tspFreshly ground black pepper
2 Shallots peeled, finely
-chopped
2 tbspMinced fresh tarragon
Procedures:
1This simple dish has such a compelling taste, you"ll never have leftovers.
2Trim the asparagus, discarding woody ends.
3Steam the spears whole, for about 3 or 4 minutes, until just tender when pierced with a fork.
4Do not overcook.
5Rinse in cold water, drain.
6Place the olive oil in a small bowl; add the mustard and beat until the oil thickens.
7Add the vinegar, salt pepper, shallots and tarragon.
8Arrange the still-warm asparagus on a serving plate and pour the dressing over it.
