| quart | Water | | 1
| | Onion, chopped | | 1/3
| cup | Green bell pepper, chopped | | 1/2
| | Jalapeno pepper, diced | | 1/3
| cup | Red bell pepper, chopped | | 1
| | Celery rib, chopped | | 1
| | Ham bone | | 1
| | Chunk of salt pork | | | Salt to taste | | | Black pepper to taste |

| 1 | Rinse peas; soak overnight in cold water to cover.?Drain and put in dutch oven with 2 quarts fresh water.?Add remaining ingredients; cover and simmer about 2 hours, or until peas begin to soften enough to mash easily.?Add water as needed.?/td> |
