Ingredients:
1/4 cupCabbage, finely chopped
1/4 cupCarrot, finely chopped
2 tbspGreen pepper, finely chopped
2 tbspCelery, finely chopped
2 tbspOnion, finely chopped
2 tbspRadishes, finely chopped
2 xBread, whole wheat, toasted
1 cupCheese, cheddar, shredded
1/4 cupAlfalfa sprouts
Red pepper (dash)
Procedures:
1Per serving: 308 cal., 18g pro., 17g carbo., 20g fat, 60mg chol., combine first 6 ingredients.
2Top each slice of toast with ?cup of vegetable mixture.
3Place slices on baking sheet.
4In a small saucepan combine cheese, pepper, and 2 tablespoons water.
5Cook and stir till cheese is melted.
6Spoon over sandwiches.
7Broil 4-inches from heat for 5 minutes or till cheese is bubbly.
8Transfer to serving plates.
9Top with sprouts.
