Ingredients:
3 tbspVegetable oil
2 eachGarlic cloves, minced
1 largeOnion, diced
1 eachGreen pepper, diced
2 eachCelery stalks, diced
2 eachCarrots, diced
1/2 lbsFresh mushrooms, sliced
2/3 cupTamari
1 eachSalt to taste, if needed
1 tspParsley
1/4 tspCayenne pepper
4 largePotatoes, boiled & mashed
1/4 cupSoy milk
1/3 cupVegetable oil
3 tbspOrange juice
1/2 tspSalt
1 1/2 cupWhole wheat flour
Procedures:
1Heat oil in a skillet add the garlic & onions & saute for 3 minutes.
2Add the carrots, celery, green peppers & mushrooms & continue to saute for 5 minutes.
3Season well with the herbs & spices, including the tamari.
4Combine the mashed potatoes with the soy milk.
5Add the saute to the potato mixture.
6In a bowl, combine the oil, orange juice & salt.
7Gradually add the flour til lthe texture is moist & pliable.
8Roll the dough out on a floured board.
9Place rolled dough in a rectangular casserole so that the edges flop over the sides.
10Spoon the vegetables into the centre of the dough.
11Moisten the edges of the dough & seal into a loaf shape.
12Place on a cookie shhet or leave in the casserole, making sure that whatever you use is oiled to prevent sticking.
13Bake for 40 minutes at 375°F.
14Serve with vegetables on the side, such as mashed turnip, peas or beans, & cabbage.
