Ingredients:
2 tbspGhee
1/2 tspCumin seeds, crushed
1/2 tspCoriander seeds, crushed
1 tbspGinger root, minced
1 tbspGarlic, minced
1/2 cupOnion, diced
1 tspTurmeric
1 tspGaram masala
1/2 tspChili powder
1 Dried red chili, minced
2 Bay leaves
2 cupMixed vegetables, chopped
1 cupPotatoes, diced
1 cupTomatoes, diced
1 cupWater
1 tspWhite vinegar
1 tbspTamari
1 tspPepper
Procedures:
1Heat ghee in a large pot.
2Add cumin, coriander, ginger, garlic & onion & stir-fry for 1 minute.
3Add turmeric, garam masala, chili powder, minced red chili & bay leaves.
4Mix well & stir-fry for another minute.
5Add vegetables, potatoes & tomatoes.
6Mix well & cook for another 5 minutes.
7Add water & bring to a boil.
8Add remaining ingredients.
9Serve hot over boiled rice.
