Italian-style pot roast - venison

Ingredients:
4 lbsVenison pot roast
Salt and pepper
1 cupDry red wine
1 cupCelery, chopped
2 tspOregano
Flour
2 tbspFat
8 ozCan tomato sauce
1 medOnion, chopped
1 tbspParsley, minced
1 Clove garlic
Water
Procedures:
1In dutch oven, brown roast on all sides in fat.
2Add salt and pepper to taste.
3Combine remaining ingredients, except flour, and pour over pot roast.
4Cover and bake 3 to 4 hours at 300.
5Pour off liquid and measure.
6Mix a smooth paste of flour and water, measuring 2 tbl of water and 1 ?tbl of flour for each cup of liquid.
7Gradually add hot liquid, stirring constantly and cook until thickened.
8Correct seasoning
