Ingredients:
2 medRusset potatoes, peeled and
Cut into 1 in. pieces
2 medCarrots, pared and cut into
?inch slices
1 tbspOlive oil
1 tspEach basil and oregano
1/4 tspSalt
1/4 tspPepper
1 largeZucchini, cut into ?inch
Pieces
1 largeRed bell pepper, cut into
1 inch pieces
2 clGarlic minced
2 cup4 cheese country casserole

Procedures:
1Directions place potatoes and carrots in greased 13 x 9 inch baking dish.
2Drizzle with oil; sprinkle with basil, oregano, salt and pepper.
3Toss lightly to coat.
4Bake 425°F. for 20 minutes.
5Add zucchini, red pepper and garlic; stir vegetables.
6Return to oven and bake 25 minutes or until all vegetables are tender.
7Sprinkle with cheese; return to oven about 2 minutes more or just until cheese melts.
