Ingredients:
2 cupGround Meat Mix
1/2 cupWater
14 1/2 ozCrushed tomatoes
15 1/2 ozDark red kidney beans --
Undrained
1 cupLong-grain rice -- cooked
1/2 cupBell peppers -- chopped
2 tspChili powder
1/2 tspSalt
1/2 cupFat-free cheddar cheese --
Grated
1 cupLow-fat tortilla chips --
Crushed
Procedures:
1In a skillet, combine ground meat mix, and water.
2Cover and cook over low heat for 15 minutes.
3Break up meat with a fork.
4Stir in crushed tomatoes, kidney beans, rice, bell peppers, chili powder, and salt.
5Bring mixture to boiling; reduce heat.
6Cover and simmer for 20 minutes, stirring occasionally.
7Sprinkle cheese and tortilla chips over meat mixture.
