5 1/4 ozBulgar wheat
1 cupWater
2 tbspVegetable oil
1/2 cupChopped seeded tomato
1/2 cupChopped cucumber
1/4 cupSliced green onions and tops
1 cupLow fat plain yogurt
1/4 cupNutraSweet Spoonful
2 tbspLemon juice
2 Cloves garlic, minced
1/2 tspDried mint leaves
1/2 tspDried oregano leaves
1/2 tspSalt
1/4 tspPepper
Procedures:
1A nice change from rice and potatoes, this tabbouleh is a tasty side dish that"s blended with mint and oregano for a slightly sweet flavor.
2pour bulgar wheat into medium bowl; discard spice packet, if included in box of bulgar.
3Mix water and oil into bulgar; let stand until water is absorbed, about 20 minutes.
4stir tomato, cucumber and onions into bulgar.
5Mix remaining ingredients; stir into bulgar mixture.
6Serve at room temperature or refrigerate and serve chilled.
