Ingredients:

2 cupSugar
2 Eggs
3/4 cupOil
1 tspVanilla
3 cupFlour
1/2 tspBaking powder
1 tspBaking soda
1 tspSalt
2 tspCinnamon
1 smallBox vanilla instant pudding
1/2 cupNuts, optional
2 cupZucchini, grated
Procedures:
1Mix sugar, eggs, oil and vanilla.
2Beat 2 minutes.
3Sift together flour, baking powder, baking soda, salt, cinnamon and dry pudding mix.
4Mix both mixtures together.
5Add nuts, if desired, and zucchini.
6Beat another 3 minutes.
7Pour into well-greased loaf pans and bake at 350°F for 50 minutes.
8for muffins, bake at 400°F for 20 to 25 minutes.
9makes 24 muffins or 2 loaves.
10my notes: be sure to not to drain off the juice in the bottom of the food processor when you grate the zucchini, otherwise the batter is too stiff.
11If the batter is still not moist enough, add a bit of water.
