Ingredients:

| cup | Sugar | | 2
| | Eggs | | 3/4
| cup | Oil | | 1
| tsp | Vanilla | | 3
| cup | Flour | | 1/2
| tsp | Baking powder | | 1
| tsp | Baking soda | | 1
| tsp | Salt | | 2
| tsp | Cinnamon | | 1
| small | Box vanilla instant pudding | | 1/2
| cup | Nuts, optional | | 2
| cup | Zucchini, grated |

Procedures:
| 1 | Mix sugar, eggs, oil and vanilla. | | 2 | Beat 2 minutes. | | 3 | Sift together flour, baking powder, baking soda, salt, cinnamon and dry pudding mix. | | 4 | Mix both mixtures together. | | 5 | Add nuts, if desired, and zucchini. | | 6 | Beat another 3 minutes. | | 7 | Pour into well-greased loaf pans and bake at 350°F for 50 minutes. | | 8 | for muffins, bake at 400°F for 20 to 25 minutes. | | 9 | makes 24 muffins or 2 loaves. | | 10 | my notes: be sure to not to drain off the juice in the bottom of the food processor when you grate the zucchini, otherwise the batter is too stiff. | | 11 | If the batter is still not moist enough, add a bit of water. |
