| 1 | : tomatoes, : or 3 cups chopped canned : tomatoes 5 bay leaves 1/3 c vegetable oil 1 tb plus 2 teaspoons salt ?ts cayenne ?ts freshly ground black pepper 1 ts dried thyme 2 tb chopped garlic |
| 2 | preheat the oven to 300 °F. |
| 3 | wash the okra under cool water. |
| 4 | Cut off the stems and slice each pod crosswise into ?inch rounds. |
| 5 | Combine the okra and the rest of the ingredients in a large heavy ovenproof pot, not cast iron. |
| 6 | Mix well. |
| 7 | Cover the pot with a lid. |
| 8 | Bake, stirring occasionally, for 1 ?to 2 hours, or until the slime has disappeared. |
| 9 | Bake, uncovered, for the last 15 minutes of the cooking time. |
| 10 | The time will vary, depending on the tenderness of the okra. |
| 11 | Remove the bay leaves. |
| 12 | Serve immediately or let cool completely and store in freezer ontainers. |
