Ingredients:
1 lbsSirloin steak, cut 1" thick
- boneless
1 largeGarlic clove, crushed
2 tbspOlive oil, divided
2 medOnions, cut in ? slices
1 tspBasil, dried
1/8 tspRed pepper, ground
14 ozTomatoes, canned, with juice
1 cupBeef broth
2 medZucchini, cut in ? slices
Parmesean cheese, grated

Procedures:
1Preparation time: 30 minutes cut steak into ? thick strips; cut each strip into 1" pieces.
2Combine garlic with 1 tb. oil; sdtir into beef and reserve.
3Saute onion in remaining oil in a large saucepan for 3 minutes.
4Sprinkle with basil and pepper; cook and stir 1 minute.
5Add tomatoes, beef broth and zucchini.
6Bring to a boil; cover reduce heat and simmer 15 minutes.
7Meanwhile heat large nonstick skillet over medium high heat.
8Cook and stir the beef 1 to 2 minutes; add to sauce.
9Stir 2 ts.
10Cornstarch dissolved in 2 tb. water into stew and cook until slightly thickened, about 2 minutes.
11Sprinkle with grated cheese, if desired.
12Serving suggestion: toasted garlic bread
