| lbs | Sirloin steak, cut 1" thick | | | - boneless | | 1
| large | Garlic clove, crushed | | 2
| tbsp | Olive oil, divided | | 2
| med | Onions, cut in ? slices | | 1
| tsp | Basil, dried | | 1/8
| tsp | Red pepper, ground | | 14
| oz | Tomatoes, canned, with juice | | 1
| cup | Beef broth | | 2
| med | Zucchini, cut in ? slices | | | Parmesean cheese, grated | | | - optional |

Procedures:
| 1 | Preparation time: 30 minutes cut steak into ? thick strips; cut each strip into 1" pieces. | | 2 | Combine garlic with 1 tb. oil; sdtir into beef and reserve. | | 3 | Saute onion in remaining oil in a large saucepan for 3 minutes. | | 4 | Sprinkle with basil and pepper; cook and stir 1 minute. | | 5 | Add tomatoes, beef broth and zucchini. | | 6 | Bring to a boil; cover reduce heat and simmer 15 minutes. | | 7 | Meanwhile heat large nonstick skillet over medium high heat. | | 8 | Cook and stir the beef 1 to 2 minutes; add to sauce. | | 9 | Stir 2 ts. | | 10 | Cornstarch dissolved in 2 tb. water into stew and cook until slightly thickened, about 2 minutes. | | 11 | Sprinkle with grated cheese, if desired. | | 12 | Serving suggestion: toasted garlic bread |
