Procedures:
| 1 | Pare potatoes and cut them into ?inch strips. | | 2 | Soak the strips in iced water for at least 30 minutes. | | 3 | Drain and dry thoroughly. | | 4 | In a skillet or deep frier, heat oil to 350 deg f. | | 5 | Fry potatoes for about 2 minutes. | | 6 | Fry only about one cup at a time, do not over crowd in the oil. | | 7 | Use a slotted spoon or frier basket to remove them quickly. | | 8 | Drain on paper toweling. | | 9 | Allow potatoes to cool at least 10 minutes. | | 10 | Raise the temperature in the pan to 375 deg f. | | 11 | Fry potatoes for about two more minutes or until golden brown. | | 12 | Drain on paper towling in a bowl and salt to taste. | | 13 | Serve immediately. |
