Ingredients:
2 cupAll-purpose flour
2 tspBaking powder
Pn Salt
1/2 tspGround nutmeg
1/4 tspGround cinnamon
1/4 tspGround cloves
1/4 cupCold butter, cut in
-small pieces
1/4 cupSolid vegetable shortening
-cut in pieces
1/3 cupRaisins (plumped)
1/3 cupChopped walnuts
2/3 cupPacked light brown sugar
Grated peel of one lemon
1 Egg, lightly beaten
1 tbspTo 2T milk
Procedures:
1A staple at english boarding schools, these individual cakes are served with afternoon tea.
2They don"t keep well; after a day they take on the characteristics of "rocks".
3Preheat oven to 400f (205c).
4Grease a large baking sheet; set aside.
5Sift flour, baking powder, salt, nutmeg, cinnamon and cloves into a large bowl.
6With your fingers, rub in butter and shortening until mixture is crumbly.
7Stir in raisins, walnuts, brown sugar, and lemon peel.
8Add egg and just enough milk to make a stiff dough.
9Drop tablespoonfuls of dough 2 inches apart on baking sheet.
10Bake 12 to 15 minutes or until golden brown.
11Transfer to a wire rack to cool.
12Serve fresh.
13Makes about 15 rock cakes
